When people ask me how my trip was I respond with “Great! I ate…..”.
That is how I look at the success of a trip. I indulged on some of the yummiest (and often deep fried) treats I have ever had.

A friend of mine, a native to New Orleans invited a group of our collage friends down to NO, for the Jazz and Cultural Festival this year. You will need a Country Style Ham, preferably smoked for this and you should start at least one day before you would like to cook and serve your meal. Do not leave it until the last minute or your will not be able to get one from the store. These hams are not the same as the deli style hams, which are processed, and filled with chemical preservatives. There will be three methods used to infuse flavours into this ham. Brining, dry rub and a glaze will all be used.
