It took me a lot of laps around the grocery store on Friday night to figure this out. I had pork and avocado in my cart and I wanted to BBQ. It wasn’t until I stumbled across some “tree ripened peaches from Chili” (ya right!) that dinner popped into my head. Somehow I just knew that this would turn out delicious and it did!

My first experience with bone in meat was so amazing – it gets a mention of it’s own, the the bbq fiddleheads were so delicious I could not not mention them.

We had an short amazing heat wave here last week, with temperatures as high as 27C when the previous record had been 12C. So of course everyone dig out their shorts and BBQ’s. Although it has returned to normal March weather (an hour ago it was snowing), my BBQ is out of hibernation for the summer!

Venison Burgers with Blue Cheese and Umami Sauce, Roasted Potatoes with gravy and cheese

This is probably the last dinner I will make in my lovely city apartment. Packing has begin, putting me in a stressful case leasing me with no desire to cook. However, my unemployedness did give me the chance to cook one final dinner of over the top burger and fries on a Monday night. Bittersweet.

Venison Burgers with Blue Cheese

Venison Burgers with Blue Cheese and Umami Sauce

Ingredients

    Venison Burgers with Blue Cheese
  • 2 lbs ground venison (I used NS white tail deer)
  • 1 lbs bacon ground or very finely chopped (I grind mine at the same time as the venison)
  • 2 tbsp Worcestershire sauce
  • 2 eggs
  • 1/2 c bread crumbs
  • 0.5 c crumbled blue cheese – or more to taste (I used Dragon’s Breath from the Dutchman)
  • 1 tbsp Red Miso (optional)
  • Burger Buns
  • Umami Sauce
  • 0.5 c Hellman Mayo
  • 0.25 c Ketchup
  • 2 tsp Taste No 5 Sauce

Instructions

  1. Mix all ingredients by hand until just mixed, do not over mix. Form into 5-7 medium sized patties.
  2. Grill the burgers over medium direct heat (move to indirect if the outside starts to burn), and cook through 8-12 minutes. Combine all ingredients for sauce in a bowl and mix. Spread Umami sauce over the bun, and service with a crisp piece of lettuce and a slice of tomato.

I offered to cook my family a southern inspired BBQ, really it was just an excuse for me to make deep fried pickles. Cooking at my parent’s house is always a challenge, as it is not my kitchen, I am relying on my mother to purchase the ingredients (which is good for the pocket book but always a gamble). My primary preparation area is large and deep and my mother’s counters are quite narrow and cluttered. She also does not have all the tools I need. I try to take what I need from my house but working in an kitchen that is not my own is always a challenge.

When I camp there are a few basic ingredients that you need to have. With these you can make anything taste great. I don’t think that I fully understand, when people write about making these extravagant meals while camping. I mean, yes, you want to eat great while camping, and you are surrounded by, and inspired by nature, but doesn’t dragging a thousand of ingredients into the woods defeat the purpose of what you are trying to accomplish?
