I love eggs salad. Eggs salad on it’s own, egg salad on sandwiches, there is not time that I don’t love egg salad. Supreme egg salad with tones of things tossed into the mix, or basic egg salad sandwich with nothing but eggs, mayo and white bread. After one customer’s suggestion at the farmer’s market, regarding pea shoots on egg salad, I had been craving this ever since.

I think that everyone has a hard time living with root vegetables. Sure, everyone likes potatoes, and everyone likes SOMETHING, carrots, beets, turnips, but not everyone likes everything. Even worse, it’s hard to find hardly ANY local produce in the grocery stores, and the selections often isn’t that inspiring. This is a beautiful, colorful winter salad, that brightens up any plate and can be combined with any winter vegetables you happen to have around.

This is one way I’ve come up with to avoid all of the “brown” colors and dishes for this time of year. Purple Kale, Red Cabbage and Brussel Sprouts make up this salad. Already in my house I’m hearing complaints about “all the brussel sprouts” but I say take the green while it lasts – anywhere you can get it! I’m not very experienced in “asian style dressings”. I recently bought a bottle of sesame oil, and I’m looking to that for inspiration. The sesame oil mixed with tahini makes a great flavour base that you can add acids, spiciness, saltiness, garlic and ginger too as you see fit, and the strong flavours also stand up well to strong bitter flavours of the brussel sprouts and cabbage.

This is a great side dish that is bright and colorful when so many food this time of year are brown. All of the work is in preparing the vegetables so make sure that it’s all done before you start putting the slaw together. The bit of dressing is optional, but the mustard and Parmesan help balance the bitterness of the sprouts if that is what turns you off from them. This could also be served cold.

I was cooking dinner for a friend who’d been away working for the past 6 weeks. When I asked him what he wanted he said “anything that wasn’t restaurant food”. I couldn’t think of anything more homey and delicious then a roasted chicken BUT it was a Monday night. I wasn’t going home from work on a Monday and cooking a whole chicken. I used boneless skinless chicken thighs, almost always, because they have more fat and stay more moist then chicken breast. Since I didn’t have time to brine, I used some left over bacon I had to keep things moist and leftover fall veggies to make it a one pot dish!
