Easter dinner is always bittersweet for me. Religion symbolism aside there is a lot of ideas of “new” and “growth”, surrounding Easter. Baby chickens, and spring, after a long cold winter. BUT here in Nova Scotia, if Easter is too early, then we are still surrounded by winter vegetables, snow, and turnips.

Inspiration from this pie came from my obvious loves! Bacon and Cheese. After requests at the Southern Comfort event I tried to incorporate bacon as much as possible, and who doesn’t love cheese? Combined with sauteed mushrooms it is probably one of my favourite flavour combinations. Bacon, Cheese and Mushrooms?? Yes Please!

What better way to get eggs onto pizza but with cute little quail eggs. I’ve seen recipes before that have eggs on pizza, but I couldn’t imagine the humongous chicken egg and all it’s glory sprawled across my pizza. The way to get the eggs perfect to your desired doneness is to pre-poach them so that they are cooked about half way to how you like them and then placing them on the pizza. If you like your eggs gooey and runny, don’t cook them at all, just make little nests and crack them right onto the decorated pie!

This was the final use for the Smoked Chicken, and what a bitter sweet finale it was. I had no problems or issues using the leftover carcass to create some delicious chicken stock which I used in this soup. If you don’t have smoked chicken you can always use rotisserie or leftover roast chicken or leave it out completely. You can also use store-bought chicken stock if you don’t have any on hand.

Ok, ok I admit it. I bought asparagus. A whole delicious kg of asparagus from Costco. With everything I’ve learned from the market, I like to think of myself as someone who “know” about vegetables and eating locally. I was pretty proud of myself for cooking my first “100 mile local challenge dinner” for all my friends in the bleakness of winter, but when I saw that delicious fresh (ok ok freshLOOKING) asparagus at Costco last week I couldn’t help myself. And I have been enjoying every delicious sprig – including in this dish where it’s cooked quickly in a pan and served with bacon roasted mushrooms and pepitas cooked in duck fat (I’m drooling just reliving the memory).

I thought that moving back into the city would make my internet connection better! Out in the country everyone shared the same IP address the the internet was sssllloooowww at peak times. So now I’m back in the city, sharing a connecting wall with a stranger, and my internet is still slooowwwww, only now it’s “fiber-op” – which means what? not too sure except that my roommates are more frustrated that it’s not working, websites still don’t load at peak times, and uploading pics can still be a pain in the you-know-what. It is a child of the imaginations of me and my roommates paired with cheese curds that I got at the market. Also because I wanted to do a roast, and I figured right after holidays everyone would have been turkied-out. After asking around a lot of people here do turkey for their holiday meal, and chicken is too similar to turkey. Beef would have been amazing… But the economical thing again.
