Poached Pear with Caramel Honey Ice Cream and Maple Bacon

This dessert is my pride and joy of the first WBC Family Dinner – Local Challenge Dinner. So much so that I can’t even decide on a name. I don’t know if they caramel honey ice cream or the maple bacon or the pear should be at the forefront. In the end it is the ice cream. I knew I was going to do an ice cream for the dinner – but the only sugar options I had were maple and honey. I also did not have vanilla. I wanted caramel but could not use sugar and I thought – why not honey and/or maple caramel?? I did an experiment trying to turn both maple and honey into caramel and honey was more successful.

I love popcorn – it’s my desert island food. (You know – stranded on an island, can only eat one thing for the rest of your life…) Usually when I eat popcorn I use a hot air popper. I just love the toasted corn flavour that comes out of the corn. The bagged versions cover that nutty flavour up. But, when I was thinking about getting the flavour for the popcorn, I realized that I really wanted it to be the flavour of buttery movie theater popcorn. And if I want that flavour I have to go to the source or close too it. Air popped popcorn would have given me a hint of flavour, salt and butter. And no one wants salt and butter flavoured ice cream.

Bacon Ice Cream has always been a fantasy of mine. And I thought – what better time then a build your own sundae party!? None. No better time at all. This recipe came from David Lebovitz who is writing from Paris and doesn’t have free-flowing access to maple syrup. (My deepest sympathies) but he is right I think when he writes that reducing maple syrup and caramelizing the bacon in that would be fantastic, or my thoughts of adding maple syrup in place of some of the brown sugar in the custard. Regardless – who wouldn’t want Bacon Ice Cream?

The original recipe was for coconut ice cream, I added the lavender and the honey. It is the first time I’ve seen cream cheese added in with ice cream but it turns out there is a real science to it.

I have moved out to my family’s blueberry farm and I have extremely unreliable internet. I am writing my entries in word documents and will be pasting them later. Here is the original recipe, and below are the alterations I made adding the honey and lavender. The alterations were very simple but the result was much more impressive.
