What better way to get eggs onto pizza but with cute little quail eggs. I’ve seen recipes before that have eggs on pizza, but I couldn’t imagine the humongous chicken egg and all it’s glory sprawled across my pizza. The way to get the eggs perfect to your desired doneness is to pre-poach them so that they are cooked about half way to how you like them and then placing them on the pizza. If you like your eggs gooey and runny, don’t cook them at all, just make little nests and crack them right onto the decorated pie!

The Marlborough Man has a few “annoying” doesn’t likes. Most of them I can generally work around, sometimes I find that calling the dish something different then it is helps. Once of his favourite doesn’t likes is potato salad. He doesn’t like the creaminess of the potatoes and he doesn’t like the mayo in with the potatoes. So I researched and found a few ideas to take the “idea” of potato salad and turn it into something other then potato “salad”. So I called this roasted potatoes with bacon dressing.

This was the final use for the Smoked Chicken, and what a bitter sweet finale it was. I had no problems or issues using the leftover carcass to create some delicious chicken stock which I used in this soup. If you don’t have smoked chicken you can always use rotisserie or leftover roast chicken or leave it out completely. You can also use store-bought chicken stock if you don’t have any on hand.

I had a hard time getting into the Christmas meal this year. Usually I begin planning it weeks in advance and go over every detail in my head and spend a week sourcing the best products. This year I just couldn’t get into it. I have a deal with my mom that “she pays for the dinner and I cook”. Meaning she houses the dinner and used to cook it – but now I send her a list and she buys everything, and I show up and cook. It’s a win-win,

So it’s been a while since I’ve posted and I’ll admit, I even put off writing this. Seems that I’m lacking some serious inspiration these days in the cooking department. Even though I just finished an awesome bread baking class that gave me loads of inspiration, I have also recently found out that I’ll be out of work at the end of this week and that is seriously deflating my sails. Not that I won’t find another job, but the stress of money until then, as well as Christmas around the corner, has drawn me back into my old comfort foods (breaded chicken, with mashed potatoes corn and gravy!, burgers, and pasta with mushrooms and sausage).
