Inspiration from this pie came from my obvious loves! Bacon and Cheese. After requests at the Southern Comfort event I tried to incorporate bacon as much as possible, and who doesn’t love cheese? Combined with sauteed mushrooms it is probably one of my favourite flavour combinations. Bacon, Cheese and Mushrooms?? Yes Please!

The first round of pies for the appetizer was simple. Mini quail egg quiches. Simple pie crust, cheese and crumbled sausage and a quail egg baked over the top.

Ok, ok I’m only half kidding. For the WBC Family Dinner – Southern Comfort theme, I did pecan pie for dessert. In reality I made 2 different pecan pies. One was a Old Fashioned Pecan Pie and the other was a Maple Pecan Pie with a whole wheat crust. Truthfully, to me and all the guests both pies tasted the same. Or so close to the same that you could hardly tell. Therefore I’ve posted the link to the Old Fashioned Pecan Pie about and I am only listing the Maple Pecan Pie recipe, a) because I like the fact that it uses maple syrup which is bountiful her e in Nova Scotia, and b) because I like that the crust has whole wheat in it – SURE it’s still a pie, but every nutrient counts!

I offered to cook my family a southern inspired BBQ, really it was just an excuse for me to make deep fried pickles. Cooking at my parent’s house is always a challenge, as it is not my kitchen, I am relying on my mother to purchase the ingredients (which is good for the pocket book but always a gamble). My primary preparation area is large and deep and my mother’s counters are quite narrow and cluttered. She also does not have all the tools I need. I try to take what I need from my house but working in an kitchen that is not my own is always a challenge.

I found the portions for the dough were not accurate. My dough came in a 10 x 10 square. The first leaf I tried rolling to the size in the recipe but it was too thin and the cherries leaked everywhere while baking.

Also I found the squares were too small for the amount of filling per pie. I made smaller pies and used less filling. I also used a considerable amount of flour to prevent it from sticking to the work surface. At first I was concerned that the ends would not adhere if I used a lot of flour but it was not an issue. It also prevented the pies from becoming misshapen when moving them to the pan.
