Finally the greenhouses are starting again, to produce delicious fresh vegetables. Once spring kicks into action it always surprises me how quickly things come on. Although two weeks ago we were still withstanding blizzards; tomatoes, spinach, peppers and mesclun mix is already coming out of the greenhouses! Personally, I am so so SO happy to have tomatoes back in my life. Tomato sauce, tomato soup, tomato sandwiches are some of my favourite things. I figured out this method for making tomato soup – well, a thick tomato soup or a thin tomato sauce with old(er) tomatoes and basic things you have in your fridge, it’s super easy and has a really cool science aspect to it as well!

I have a friend who is a vegetarian. I prefer to use the word recovering vegetarian because I am a firm believer of humans eating meat. Now don’t get me wrong, I don’t push it on people and if I know that people have preferred or required dietary habits I do everything I can to cater to those requirements – what’s the point of cooking if no one can/will eat it? But, if you are a close friend or family member and you choose to refrain from eating meat because of animal mistreatment, then I am going to push you. Not because I am a fan of animal mistreatment, exactly the opposite.

Yes, capitalized. It is the only way to express my excitement for BBQ sauce. I love BBQ. I love cooking on fire, I love cooking outside, I love fewer dishes from using the BBQ. As a result I am also in love with BBQ sauce. I have written about it many times. Dr Pepper BBQ Sauce, Spicy Andouille BBQ Sauce, Basic BBQ Sauce, they are fantastic. And now the I am getting into the full swing of summer I am upping the anty on my BBQ sauces.

As much as I am deep into a local eating kick – I have always said I will never be able to live the ‘100 mile food challenge’ until I live within 100 mile of an avocado tree. I just love avocados, and as much as I appreciate local food and supporting the local economy, I refuse to forget that I live in a modern world allowing me access to delicious ingredients. I love Greek olive oil, I love French cheese, I love Italian wine, and I’m not going to give those things up anytime soon. As with a healthy diet, I believe in moderation, and being educated and knowledgeable with everything you eat.

After a long weekend of serious partying, I woke up yesterday craving a hamburger. But not just any hamburger, a gourmet burger with cheese and bacon…. to start. The more I got thinking the more I thought about burgers I’d eaten over the past few months. Burgers with sauce, “open faced” burgers, topped with fried egg, the combinations are endless. After a set back of having no buns, (which turned out to be a blessing) my best burger creation to date was born.

I know that Italians can get quite worked up over the use of the titles of their dishes. Which is why I used inspired in this title. These were both inspired but dishes I ate in Italy. Specifically the Fava Bean dish, I had something similar in Rome, with smaller white beans, which I’m not exactly sure what they were. With the left over salad, I tossed in with some scrambled eggs the next morning for breakfast.
