It’s not too often that I am able to whip up a yummy dessert right out of the fridge but it did happen one Friday night a few weeks ago. The Mad Hatter Tea Party was a recent memory and I  had leftover bread dough from Garlic Fingers and Blueberry-Cranberry Pie Filling in the fridge. The roommates were begging for a sweet treat and bam this blueberry-cranberry bun popped into my head. Given that the dough and the filling were already made it’s needless to say it was all pretty simple.

Anyone who knows my roommate will be able to tell you how much she LOVES garlic fingers. I have never seen anything like it – every time she craves something or wants to order out – it’s always the same – garlic fingers. So yesterday when she announced she was going to clean the whole house I was happy to respond – if you do that I’ll cook whatever you want for dinner – I admit I was still surprised when she said she wanted garlic fingers.

IMG_4704I’ve made burger buns but I was craving something, sweeter and chewier then the usual whole wheat breads I make. Enriched dough, I learned in a bread baking class, is dough that usually has butter and/or eggs added to it. This recipe, has butter and more sugar then usual to make it soft and chewy, the perfect dough to accompany the rich elk and sausage sliders I made to go with them.

Last Saturday at the Market I bought a smoked chicken and needless to say it got me really excited. When I got home, I could not decide what to do with it. I knew it had to be delicious but I didn’t want to limit it to one delicious fate. The result on the first night was smoked chicken pizza. But we couldn’t decide one what kind of pizza we wanted… Decisions, decisions, life it tough. The result was one cream based and one tomato based chicken pizza.

There are some things that as a home cook I never ever expect to master. Techniques that seem so intricate or magical that you never thinks you will understand how it’s done. For me, pita bread was one of those things. I’ve always wondered how they get the pocket into the pita, or how thinly they must roll the dough, and how skilled they must me to get the shape.

Above are these rolls with just cheese as a filling. You can fill them with anything including mushrooms, jalapenos, ham, bacon the possibilities are endless!

This is such an amazing versatile recipe that I got from a local baking class I took from Sue Morrison. I added my own fillings of roasted mushrooms, goat cheese and jalapeno to some. But you can add anything you’d like. Try different cheeses, ham, bacon, roasted red peppers, roasted garlic, any roasted vegetable actually, green onions, serve with a fried egg the possibilities are endless!

This week I started a four week bread baking class as NSCC in Dartmouth. After my first class I am already so pleased that I took the class. I’ve learned so much about baking bread already and next week we are getting into multigrain breads. Yum!
